It all depends on what type of methods you are willing to use to kill someone. If you use traps, alot of thew hard people in BG2 wont pose any challenge. (Firkaag, Shadow Dragon, Kangaxx etc) can all be killed like this.
Personally, i didnt find the demon knight (in BG1) very hard. I just hasted ...
