Are you talking about stealing an item from a chest/table etc or pickpocketing? I've tried countless times to pickpocket from invis and I get caught all the time, but am fine using sneak.

Sneak is simple to raise

To raise sneak, find somewhere with a single static npc, stand just out of their immediate line of sight, so that you have a chance of sneaking. Hold down your sneak button, if the sneak icon flashes on and off regularly, that's a perfect spot. If it stays on or stays off ...
