While clerics, rangers, or paladins have obvious anti-undead abilities, I have a particular style that I'd like to play, but am wondering how to go about it. I'd like a character that weilds a single alchemical silver longsword, a heavy crossbow, holy water, leather armor, and of course, garlic. Ideally, I'd like a character that plays somewhat like a rogue, using stealth and with the ability to remove traps and pick locks, as I'd imagine a vampire hunter would develop these skills in order to hunt their prey. However, since rogues are very dependent on sneak attack they are horrible against undead, which are immune to sneak attack (well, until they gain access to a certain epic feat).
Ranger seems to have some good things to offer as far as the lightly armored stealth style and favored enemy, but I neither want to dual weild or use a regular bow, so their bonus feats would be wasted unfortunately.
Paladins have some nice anti-undead feats to use instead of turn undead, as well as smite evil, but they lack skills and depend on heavy armor.
As far as clerics go, I don't want a heavily magic dependent character.
So, my question is, what classes would work well together to make a vampire hunter? Could rogue/ranger/paladin work? Any suggestions will be appreciated.
Vampire/Undead Hunter?
What about 3 levels of rogue (for skills access) 4 levels of Paladin (for a divine feat some BAB and divine grace) 11 levels of monk (for great flurry, monk AC speed). Then the last 2 levels either take shadowdancer if you want HIPS...or take WF unarmed and take Divine Champion 2. (shadowdancer will lose 16 BAB and an attack)

your idea of a vampire hunter build inspired me to make a build similiar to what you wanted. i came up with a ranger [high number maybe 21]/ blackgaurd 3/ then what ever else you want to make it personal.
my build is mainly a strength build dual wielding a longsword and shortsword (or maybe 2 maces which is better against undead) and having Sacred Vengeance from blackgaurd (lvl 3 must be on a multiple of 3 level to get it) also favoured enemy undead along with some other enemies but then i had favoured power attack and improved favoured enemy undead to make the build more focused on undead.
in your case you could make a human: ranger 24/blackgaurd 3/ rogue 3 [or maybe 3 of something and 21 ranger] and raise strength
the diference between my build and what you wanted is that mine is evil and that instead of a crossbow you ll be using a longbow. so take archery for your ranger and then focus on using the longsword. as for skills i dont think this build will be able to raise open lock and disable device unless you take able learner.

And able learner is the most powerful feat (pre-epic) in the game and should be taken with every build that can power up skills (like ranger).
