how are the stats int,str and Dex counted?
int for more damage in spells but does it have a bonus too?
STR for more damage or something?
and Dex for armor?
I would like too have some more detail on that
and how you can increase them
mainly by focusing on that weapon type?
or just random?
question about stats
If you float your cursor over the int, str, and dex it will tell you what they do and from there you'll figure it out what goes up as you use certain things. Int for magic, dex for ranged and str for melee but in reality they all go up, just one faster than the other two.
I didn't pay much attention on lvl 1 dif, except to the one I actually wanted my char to pursue but on lvl 2 I made sure that even those that do not focus on ranged have a few lvls there (it's easy to hit 20 then) so I could put some points in the skill dodge there for example. Now they all have something in things that are not their primary and it is good too, for they sometimes need to have it. Just make sure that you actually keep some weapons/spells that are for use for beginners for lvl 2 difficulty because by then they don't shop up any more (if you want to go that way).

If it is the same as in DS1, which it probably is, your Intelligence will go up when you use magic, your Dexterity will go up when you use ranged weapons (bows etc), and your Strength will go up when you use melee weapons (swords, axes etc).
I'm not sure if the other 2 stats will go up if you for example only use melee, or if they will just go up slower.

Everything goes up only str faster when you use melee than the other two, etc.
