So I know that you can't wear magical armour with, say, a ring of protection +1. However, as I plan my next character's gear, I'm not sure what classifies as magical armour.
Is it any armour with any magical effect? For example, the Shadow dragon's armour gives 50% acid resistance. Does that count as a magical effect and thus, I will not be able to wear +1 protection rings/amulets?
Any advice on identifying which armour's I can and can't wear protection items with would be appreciated!

I believe it's the case of +X protection items not stacking with each other, so the game doesn't let You have them equipped at the same time (or maybe that's how things actually works in 2nd ed.). So: You can't put on two items that give magical protection to AC.
I think there is a bug, where importing a character with equipped Koveras' ring of protection from BG1 to BG2 lets You don magically imbued armours with that ring still on - until You remove it.Though I'm not sure that the bonuses actually stack.

pretty much any armor that says anything other than a generic name like "Leather Armor" or "Plate Armor" is going to have the magical flag set. Exception would be the Anhkeg Plate mail.
there's an option as part of the BG2 Tweaks where you can either:
1. don multiple protection items, but only one counts towards AC OR
2. wear unlimited protection items together (And they all count like PnP).
