The differences will be in the stats, and far less in how each race relates to you. The greatest difference comes if you choose a race that doesn't regain magicka naturally, through sleeping, but only by absorbing it from the casts of others. That really does change the way the game plays.

I should add that there are two races which dramatically change the way others deal with you: vampires, and werewolves. But those aren't choices you can make at startup. They only happen naturally, along the way.
To the Righteous belong the fruits of violent victory. The rest of us will have to settle for warm friends, warm lovers, and a wink from a quietly supportive universe.

Yeah, and some races are a little more difficult to play with. Such as... well, High Elves. They just have so many weaknesses, you have to rush around as soon as possible to get enchanted items that counteract them. But on the other hand, they have excellent magicka, especially if you picked the sign of the atronach...
Every race has it's ups and downs. I recommend looking through the morrowind yellow pages. There's a link in there that Dragon Wench put in with a very good guide to choosing your character, and it goes into all these things, pros and cons, and what you personally would do best with.
you know what they say about all work and no play...
It's totally not worth the monetary rewards!!!

some spoilers... not all blacked out.

the storyline is the same. you get the same quests. storywise, everything is the same except for SSSSSPPPPPOOOIIILLLEEEERRRRR *one of the telvani counselors automatically votes for you if you are a girl becuase she is senile and sexist and does whatever the heck she wants because she is a superwizard (weak if you ask me... but whatever) and thats the only difference i can think of. well sometimes people of your own race like you more... the race thing wasna spoiler...just forgot to stop typing in color. your choices affect gameplay, very very rarely what quests are available, and (strange though it is) even if you are an argonian amlexia still says she sees a resemblence between you and nevar. go figure.

Race in Morrowind

Race DOES have a tiny affect in how people react to you (certain races like others less), but never to the point that it'd change your gameplay at all. Other then that, the only real differences are appearences (bestial races vs. humans), and abilities.
I came, I saw, I got bored and went home.

What if you're a woman? Does she still say that you have been 'returned to [her] at last' and hint at a reunion?

Also there is a quest for House Hlaalu where you wear a mask over your face and spy on the Redoran (or something like that) but if you are an argonian or Khajit, you skip this quest because you can't wear full facial masks.

Can a beast race wear the helm of Orean Bearclaw? Its not one that would be made impossible to wear by the shape of their heads, or is the game not taking this into account?

Beast races can not wear FULL FACE helmets. This means that they can wear fur helms, and gondolier helms to their hearts content, but not, for example the redoran watchmens helm
