Because you can do so many things and it has such a large area to explore.
From what i hear ES IV is supposed to have a larger area than in ES III.
but it could be wrong.
Actually its area is going to be smaller, but the detail and delicacy they put into characters etc. is going to be much better, so they have to compensate the two.

I like the game because....I'll explain it with an example.
Yesterday I played Morrowind. I started a Nord fighter with Alteration as one of his major skills. It's the first time I really used other magic-skills except restoration and illusion. So it was something new to me. I had a couple of spells. With one I can lock doors, the other one allows me to jump higher, another one burdens the enemy. So what have I done? I wanted to fight a couple of vampires in a cave. I was to weak to defeat them in an open fight. So I lured one of them in one room. Then I used that jump spell so I could get behind him in order to lock the door. I burdened and used all my enchanted destructive rings on him. After he died, I unlocked the door I went on to the next vampire.
I like it because all the possibilities you have.

The first time I played the game, the open-endedness was like a kick in the teeth saying "Hey, Here's what you've been missing"
The game is awesome because you really can never run out of things to do, unless you're really short sighted or have gotten sick of the game (which I have never personally experienced, thank you very much) I mean, slap a few realism mods into morrowind, and it's like the Medieval Fantasy Game Of Life for frick sake.

Get up, stand up. Come on, throw your hands up.
If you've got the feeling, Jump across the ceiling.

The reason's I like this game is because of how huge it is. You can go anywhere you want to go. If you can see it, you can touch it so to speak. There is not a linear bone in this game. The story is also pretty good as well. With that being said, I do have some gripes about it. Though I suppose I should save those for another thread.
Mitch:You know, um, something strange happened to me this morning... Chris Knight: Was it a dream where you see yourself standing in sort of sun-god robes on a pyramid with a thousand naked women screaming and throwing little pickles at you?Mitch: No... Chris Knight:Why am I the only one who has that dream?
