What can you steal in IWD?
I cant steal any equipment from kuldahar stores in IWD. In BG you could. So what is the use of pick pockets ability.

You can steal some reasonable rings from the storeowners themselves. I think I got a couple of rings from the Gnome in the flying ship, and one of the mages working in the NW of Kuldahar. the Druid might also have some thiings worth nicking. Generally, as you said, theiving ain't that useful.

Things you can pickpocket in Icewind Dale:
Easthaven: Pickpocket Everard for several healing potions
Kuldahar: Oswald Fiddlebender - Necklace of Missiles, Ring of Protection +2, and potions
Orrick - Ring of Free Action and Necklace of Metaspell Influence
Arundel - Ring of Free Action
There are others you can pickpocket, but I can't remember them off-hand. Also, there is at least one merchant you can steal from later in the game.
