Could someone please explain this process please? I have tons of soulstones or whatever, in my inventory.
Also, how would I go about enchanting stuff with my stones/Welkyn Stones?

You can't enchant with Welkynd stones, you replenish Magicka with them. Varla Stones, the white ones, will recharge your weapons. You enchant with either full gems, or with Sigil Stones.
Soul Trap - well fight with somone (empty soul gem of any size in possession), then when you see their health is about to go, cast Soul Trap and whack away - you need to make sure that purplish/pinkish tint is there when you kill them and of course have an empty soul gem to store the soul. Be careful though - I think the initial ST is on touch, not on target so you need to be up close and personal for it to take effect. If the tint is there, you're all set. The initial one is also of a very short duration.

One other note about Soul Trap: Unless you use Black Soul Gems you cannot trap humanoid souls. You'll get a message that says you don't have a gem large enough......

There is another way....Umbra. Umbra has an effect that does soul trap for 200 seconds and has an attack ranging from 20 and up depending on your blade skill. So it takes an enemy out pretty quickly so soul trap has plenty of time to work. Just one power swing of Umbra can take out most baddies and it instantly does soul trap when the sword makes contact with the enemy.
So I hit "equip" on a soul gem (empty) from my inventory. Walk up to a monster, start attacking him. Cast Soul Trap? I assume you can buy this--where? I am kicked out oft he mages guild temp. So can I buy it at Discount Spells or something?
So I cast that...then I finish killing him?
Sounds easy enough...
Does the difficulty/class of the enemy give you a better/different enchantment possibility?

No, no need to equip an empty soul gem, you can't actually. You just make sure it's in your inventory. I am not sure where to buy it though, don't remember any more but yes, check there among other things.

Yes, it does depend on the enemy - Xivilai-s are Grand souls for example and give you a higher enchant ability - for example 10 attribute, while great souls would give you 9 etc. You have a list of creatures/souls here in one of the early threads, a huge one so that should help.

Sigil Stones can be found in only one place - Oblivion Gates - spoiler, highlight to read - you get them when you close the Gates - and they depend on your lvl too. You get the best when you reach high lvls.

One of the shops across the street from the discount spell place (has Enchanting in the name, I forget exactly) has spells, but I'm not sure they have any of the Soul Traps. You may just have to "make nice" with the mages guild (if you can).

Right Speech has four aspects: 1. Not lying, but speaking the truth, 2. Avoiding rude and coarse words, but using gentle speech beneficial to the listener, 3. Not slandering, but promoting friendliness and unity, 4. Avoiding frivolous speech, but saying only what is appropriate and beneficial.
your not just limited to using a spell for soul trap, have been lucky enough to find a glass claymore with shocking damage and permanent soultrap spell, just need to make sure you have plenty of soul gems as it automatically soultraps as your opponent dies.
also try basic search on the oblivion pages and tick the soultrap box, brings up different levels of spell and where they can be obtained and who from

If you complete a couple of the Daedric quests (the statues, I mean, I'm not sure if I have the name right), you can take care of your problem easy. Do the quest to defeat Umbra and just keep the sword (instead of returning it to the statue). It has a three minute soul trap duration effect, so you can take your sweet time killing the baddie. I usually hit once with the Umbra sword first, then switch weapons and kill away. Easy.
Also, another quest (can't remember which) gives you the Azura's Star daedric artifact, which is a reusable soul gem. So between the two, you won't have to worry about soul trapping again. Makes life very easy. Other than my skeleton key, those are the two items I would never part with.
Also, I think in the Shivering Aisles expansion you can get something called a "soul tomato" which is the same as the Azura's Star.
