I have never multiclassed in this game as I've always played human characters. I was wondering just how good multiclassing is. Right now I am rolling an elf cleric, but I was wondering if I should multiclass to fighter or even mage.
Also, since this character is gonna be migrated to BG2 when I finish BG, what about the class specific quests? Will I be able to do both fighter and cleric only quests or will I have only one of those to choose? (Or worse, no class quests at all? )

Multi-classing can be very powerfull. But you will level slower then singleclass characters and you will be 1-2 levels behind them (your experience is devided by 2 and distributed among your classes).
The true power of multi-classing comes into play when you don't pick the maximum numnber of teammembers (so you will gain more experience).
A fighter/cleric can be a powerfull combination, just like the ranger/cleric (also acces to druidspells).
I always prefere to keep my mages single-classed, but that is just personal.
[edit] As for the strongholds in BG2, you get the stronghold of the quest you do first.
Multi class in BG1 is very tough, especially if you pick one with non-warrior classes due to low hit point and slow level up. I once made a half-elf mage/cleric, and was really difficult to keep her alive, especially during the first three chapters.
The reward was great, though. I created her because I wanted to take her all the way to ToB, and thanks to those tomes and good roll of dice (I had total of 94 or something ater re-rolled 3times), she even had decent strength to melee (and I never created a character with too low charisma either. She had 13 without any equipment).
It depends on your play style and who you are going to take with, but cleric with mage or thief would definitely give you challenge and they are nice choice in SoA (well, at least I didn't need Anomen in my party).
As for the quests, it is the same as you have created multi-class character in SoA as Stilgar says. So you can do only one class specific quest, unless you install a multi-stronghold mod.

For multi-class fighter PCs, there's a way to get both the fighter stronghold as well as the stronghold for your other class without mods (I think). Fighter multi-classes only.
Do a search at the BG2 forums for details, how to pull it off, if it can be done in a patched game, etc.

I played an Elf fighter/thief through BG1 and now into BG2 and love it. My high Str was a great benefit to my backstabs and my high Dex kept me from getting hit so much and made me a great archer.
Great spirits have always found violent opposition from mediocre minds. The latter cannot understand it when a person does not thoughtlessly submit to hereditary prejudices but honestly and courageously uses their intelligence.
I first played BG1 with an elven fighter,mage,thief. As a multiclass you can manage with a very small party and hence you level up very quickly. With fighter, mage, thief or fighter thief, it is not that difficult solo. You just have to use the strengths of each class. Thieves for traps and sneaking past bad guys, mages for using wands, and fighter for raising your health and ability to hit. I have heard however that you don't get some of the specialities in Throne of Bhaal if you have three classes rather than two.

Your high stats are actually one of the benefits of multiclassing. The minimum values that you get on certain attributes mean that you only have to get a good roll on those remaining. Thanks to the suggestions of others I have just started a Cleric/Ranger and am very pleased that I did so. If you get a reasonable roll on charisma and intelligence your attributes are almost certainly going to be 80+ and 90+ is fairly easy. I actually rolled 97 my highest ever roll. Fighter/mage/thief would have similar advantages though from reading other threads i understand that you lose out in TOB if you triple-class.
