As I said, turkey isn't popular here in the Phils. Common fare would be chicken and ham.

The homefront is fine, job moved me across the country. Its been keeping me a tad too busy for my own liking... Did I read somewhere that your no longer teaching or have I confused you with someone else?

My families turkey recipe combines bird and pork....the stuffing along with bread and celery and maybe onion? has sausage in it and sage and poultry seasoning. It really tastes good to have the salty taste along with the potatoes and the bird...

It (the stuffing) does look pretty god awful though. But tastes quite the opposite..

Well, better too busy than just bumming around... ;)

I'm not teaching anymore. Not for this year at least. I'm full time school administrator... taking care of recalcitrant kids. I tell you, being a SYM mod prepared me for my RL job. :laugh:

And yea, its been awhile, tried to take care of somethings, but managed to end up worse then when i started... :D oh well, we live and learn.

This is a lil late I suppose, but I figured I ought to mention that I've noticed that here in the US, there seems to be alternate Christmas Day dinner options. Option 1: Turkey. Option 2: Ham. Option 3: Goose. 2 is quite popular since most people I know wrestled with the traditional turkey the month prior...and 3 is difficult to prepare properly lest you know what you are doing, though I have heard of people cooking up a goose. Option 1 is difficult enough for some folks, so I doubt Option 3 is indulged in frequently. ;)

I'm not a religious guy, and so I don't celebrate Christmas nor do anything myself related to it. However, I don't mind joining others' festivities if I'm invited. So it happens that I was "volunteered" to cook a Christmas dinner by some friends recently (truth is, I was badgered and prodded to do it since they had a taste of my culinary talents at a party earlier this year). They gave me money to spend so I figured I would do up some chickens in the oven basted with Samuel Adams Boston Lager. That went down pretty well and seemed to break them from the traditional mold.

The best part of it all was taking care of the beer I didn't use for cooking. ;)
