I haven't had time to start a game with this character, but Xmas is drawing near and I'll hopefully have more time ...
From this discussion, I think it is safe to conclude that using a good rifle is not inferior to using a pair of good pistols, damage-wise, and while the latter give a little more flexibility, one needs 3 extra feats (in two weapon fighting) to make the choice worthwhile. Since a non-soldier non-guardian character has limited feats, it might be a better choice to go with the rifle and spend feats on conditioning/toughness or dueling (for those close-quarters cases when you have to use your lightsaber).
