Edwin has a dagger and a staff when you first meet him. As if I would bother to wield such useless weapons in an NPC battle.
If you're going to resort to melee attacks, Polymorph Self is the way to go. A Brown Bear with 18/00 Strength and 18 Constitution (which gives Edwin an extra 20 HP; don't ask me how) and four attacks per round with claws is better than a Mage with a dagger, and it could give some of the other NPCs a run for their money. Or there's the Flind, the Spider, the Ogre, or the Mustard Jelly, whichever one is best suited for the situation. When Polymorph Self is in effect, you can change form at will for the duration of the spell.
Most of Edwin's protection spells will stay in effect even when he's polymorphed. The only protection spells he has when you meet him are Armor, Mirror Image, Fire Shield (Blue), Haste, Minor Globe of Invulnerability, and Shadow Door, but those could save his butt.

Why are you assuming that Keldorn would die?
When you first meet Minsc, he is unarmed, but I don't think it would be unfair to let him walk to the very next room and grab the splint mail, helm, mace, and two-handed sword that are lying there. At the very least, you could let him cast Shillelagh. I'm assuming that you would let spellcasters rest and memorize the spells they're going to use in battle. If you don't let them do that, then you might as well call off the contest. So I don't think a little bit of preparation for Minsc (like putting on armor) would be out of line.

I'm not sure about Jaheira's summoning ability, just because I'm not sure what level she would be for this battle. For the sake of comparison, Minsc has 600,000 experience points at 10th Level. If Jaheira had that many experience points, she'd be a 9th Level Fighter/12th Level Druid. Edwin has 250,000 experience points at 10th Level. If Jaheira had that many experience points, she'd be an 8th Level Fighter/10th Level Druid. Is it okay if she's a 10th Level Druid, or are we supposed to cut her experience points even more? Could she cast Iron Skins or not? Haer'Dalis only has 160,000 experience points at 10th Level. The same amount of experience would only make Jaheira a 7th Level Fighter/8th Level Druid, and she would be unable to cast 5th Level spells. How are we supposed to make this fair?
Animal Summoning I is probably a little better than Monster Summoning II. It all depends on which monsters appear. Animal Summoning II is definitely better. Call Woodland Beings, which summons a spellcaster (a Nymph), doesn't really have the same purpose as Conjure Lesser Fire Elemental, which summons a melee attacker. It's hard to say which would be more useful, since the Nymph can cast Confusion, Mental Domination, and Hold Monster while the Fire Elemental can inflict a lot of damage.
Jaheira could potentially cast a lot of spells that would counter Edwin's spells, and she could also wreak a lot of havoc on a battling group of NPCs. So I wouldn't count her out of the running.
