Firkraag and Grounded compound because I did them early in the game, they offered a real challenge and demanded some strategic thinking.

Also, the Beholder and 3 Gauths after the bridge with the djinn in the Sewers (Unseeing eye quest), because of the surprise effect. I barely survived! :)

It was a great experience beating this game, and I can look back with pride at the various foes I (and a part of the people reading this post) have conquered.
I enjoyed all the standard single uber-kick-a**-creatures with unbelievable powers (Kangaxx, Firkraag, other dragons and liches), but I can't help agreeing about the party-on-party thing. Here's some I didn't see mentioned:

Party on the second floor of that inn in Waukeen's Promenade. If you fight them right when u get out of the dungeon, it's a challenge, especially with tham imp. I had to unleash the incredible ass-kicking power of my sorceror and slowly bowl everybody over with fireballs, magic missiles, etc.

Mind flayers: the party of 6 at the end of the secret Sewer dungeon was annoying (every room - more mindflayers - more computer rsge, screams of pain, and reloads), but it was also an impressive thing once u took them all out. By the underdark, they ceased to become so impressive.

Demon Knights: ahh yess. I thought this was the ultimate party-on-party fight (I would choose it over those guys you meet in North Forest (i think?), because you get to surprise them). Those guys fought, cast spells, looked kool, and I just realized you could sacrifice your favorite Pseudo Dragon {MWAHAHAHAHAHA} to make trhem appear. A great fight.

And finally, my favorite fight: Beholders if you take the good path in the test of fear. I tried a couple of things, but becaue of abundance of Elder Orbs (at least at my level), even Cloak of mirroring didn't help. It was then that I realized my strongest, fiercest, most able warrior against these guys was... AERIE. Yes, Aerie, the superhuman fighter. That is, AFTER cloak of mirroring, barkskin, stoneskin, Spell Immunity: Abjuration, and with staff of the High forest+4. I have never laughed so much in my life (tiny once-flying elf with an inferiority complex and a strong affection for my main character calmly destroying one fierce Elder Orb after another, spells flying at her and jumping back at their poor casters. Ahhh, where is a zoom in 3d camera view when I need one).

Now, i think that's enough ranting.

ROTFL! :D :D

My first time through, I had Aerie crush the Balor near the svirfneblin (sp?) village in the underdark. She used half her spells in preparation, but it was pretty cool to behold. Let her take out all her frustration. Did she ever tell you about the time she was put in a cage???? :D :D

Like so many others have mentioned, I like the party vs. party battles. I especially like the party in the sewers. I was totally not expecting that kind of firepower. Awesone job by the game designers!

I think, however, my favorite battle was against Kangaxx the lich, before I read any walkthroughs or hints. It took me FOREVER to figure out how to beat him! I felt sooooo cool! That is, until I realized I could have just used a scroll of prot from magic. :D

I wish there were no scrolls of magic protection in the game. Sure I could just not use them but the damage is already done. When I first discovered them I thought they were cool but they take away the challenge. I never had the pleasure to discover many of the uses of spells myself because of that.

The coolest battle in the game is the "Guarded compound" one. You can do it very early in the game and it can be extremely challenging (and damn annoying) if you choose to get Celestial Fury ASAP. Not only does it provide tough enemies and lots of them, you also have to worry about those stupid traps and that theif who always stabs you in the back before disappearing :D :D
You have to have a good game plan to beat this part early.

@sabretooth: I must say it took me a couple of tries, but my mages/clerics were LOADED with control magic (charm, dominate, confusion, horror, emotion). Result: lost of people wandering around, a great fighter as your personal servant (until you kick HIS ass), and lots of fun for everybody.

Two of the toughest fights in the game came in windspear hills, if you do the quest early enough in the game. Getting ambushed my samia's group and the fight with the room full of vampires is fun.

That's why i love bg1 so much. There were so many party vs. party battles.

Not really. From BG1, I loved fighting those Doom Guards in that house in Baldur's Gate, and of course Aec'Telec, which is the best (and toughest) fight I ever had.

There are some great party vs party battles in BG2, too. I'm especially thinking of that obnoxious, highly colorful group in the top floor of that inn at Waukeen's Promenade, and that very different party you find as you're navigating through the maze of passages in Windspear Hills. (Unfortunately, the battle area is too small for the number of people, so it's pretty much a mess to watch.) Then there's the battle once you return to Underdark after leaving the Drow city, with that ogre and attendant fighters, clerics and mages; and that battle close to the secret entrances down in the sewers, where a party awaits to extort money from you. Such fun! as Minsc might say. :D

Exactly what I did too, for the same reason.

I had Minsc charming them and charging in at the Beastmaster.
