Yes, and yes.
FF Anthology (FF5 & FF6) and FF Chronicles (FF4 + Chrono Trigger) are 2-disc sets.
FF Origins (FF1 and the unreleased FF2) is a 1-disc set.
The Japanese Final Fantasy 3 has yet to be released, from what I've gathered. Then again, my info-gathering is pretty good, but not THE BEST.
