If you want the lowest attack penalty (ie the old school "To Hit" penalty) then 1 sabre is clearly the best because with duelling maxed out you get +1 to attack and +2 to damage (I think those are the right numbers)
With 2 sabres you get 0/-2 unless the off-hand weapon is light in which case (correct me if I'm wrong) you get 0/0 attack bonus and no damage bonus
I'm not sure about double-bladed sabres though
Obviously though you get 2 swings with the 2 sabre and double-bladed sabre options so it's all a matter of whether you prefer to guarantee hitting once or risk missing but take 2 swings - personally I find it easier with single sabre but for my money 2 sabres looks the best and you can have fun with the colour schemes (I had Violet and BLue last time - West Ham colours
)

From what I can tell a double-bladed saber allows you to use a single crystal like it were two, thus giving you the attack and damage bonuses for that crystal to both hands. I don't see this as superior though to the normal/short saber combo for my main character because I like using crystals to enhance attributes. I don't think the attribute gain doubles when used in a double-bladed saber and those crystals are typically less powerful for straight up damage/attack bonuses. So I guess it depends on what you want for your characters, my main was a consular/sith lord and so I wanted to use force powers and wanted a charisma/wisdom boost, but I gave all but one of my other jedi companions a single saber or a double-bladed saber so as to maximize the damage they could do with minimal crystal and upgrade requirements.

I can't say I have the best answer, all I can do is tell you what I played through with.
LS Guardian/Weapons Master
Master Dueling
Finesse: Lightsaber (I had a +11/12 STR modifier at the end)
Master Speed
Master Flurry
Even though I only had a single hilt, the last third of the game was me walking through hordes of enemies. My point is, no matter what you choose as your weapon, you'll be ok.
I didn't watch my damage ticks too often, but I did see a 141 once.
Oh, and I was a Silver blade, that is just cool.

Hello all,
Thanks for the responses. I guess I have one to add of my own now that I've played the game. I'm a Consular lvl 15 / Sith Lord lvl 2 and I haven't even drawn my lightsaber in the last 4 levels or so. My powers are so bad ass that I can take out rooms full of guys at a time. I went with a single red saber just for asthetics but really it's quite useless compared to my force powers. Thanks again everyone!

with superior weapon focus two weapon fighting, you actually get, if i am reading correctly, a +2 to main hand with a short lightsabre on the offhand...on top of the existing bonuses...
this makes the two saber combo as good in attack as the single saber max dueling..

Well... I've got a level 22 Jedi SentBlah. My average damnage is like 15((Lowest I never watched damage much)) To 30... with crits of 70-90 I use the staff. ((Duel-Blade)) Her str was 18 at start up and its like 28ish with all my items. I don't even have full upgrades and the best crystals in my blade.. So I guess its how you play. But Staff I think DOSE the most while a Duel set with normal Saber and a Short will have more wide damage.. AKA droid offhand DSers right hand.. Whatever... And Duel handing is -2/-2 with a single blade maxed out is +3 AB and +3 AC... Oh and I used old school KOTOR one feats.. not much new on my PC other then the crystal with your name. *shrugs* Her force powers suck really bad since her wisdom and charisma are like 8 16/10 with items.. Anyway Staff owns if you ask me.

Thats what my guy has, The damage number thing on the main hand is so high it doesn't even show up, it should be like 45-105, was higher when I had darkside mastery with the +1-8 damage, but I gained lightside points annoyingly at the end and didnt have any chance to earn anymore darkside points
) add master power attack to that and its brutal.

how the heck did you get str that high?

easily, GNS Belt (+4 str) dominator gloves (+5 str) power boost implant(+2 str) had master valour an master fury on at that time to along with some other stuff, (was about to beat Darth Traya), personalised crystal (+4 str), some force armour that I put that Strength underlay thing on (+3 str) Ludo Kressehs Arm Band (+1 str) and everytime I leveled up I just put it all into strength lol.
