Unfortunately I don't think it would bring any of that back. Whatever happened to make it go bye-bye it's probably lost.
But Lestat had a very good point... before we go any further, let's try what he said and see if that allows you to do the full backup we tried in the beginning.
Go to: Start Menu >> All Programs >> Accessories >> Windows Explorer
In Windows Explorer (this is not Internet Explorer), go to the Tools menu >> Folder Options >> View tab
Scroll down the list and look for an item that says 'Show hidden files and folders' and make sure it is checked. Click OK. Then try going back through My Computer and see if you can see the 'Application Data' folder.
