I prefer to dual wield myself. In fact I seldom use any missile weapons at all. But of course there’s room for divergent opinions.

It’s all a matter of personal preference.

and when i find it i get to go back home (because they don't have computers up there

I thought the assassin could only put one star into dual weild. If that's true than I would not dual weild because there thac0 is not great just because they are a theif and dual weilding with only one star would lower your thac0 on both hands I think. Anyways, what weapons do you use anyways? My assassin uses celestial fury (of course) and single weapon style.

) I'll start a game with a dualled Assassin-Mage

Still wondering at which Assassin level I should switch : 9-10 is standard, any other idea ?

Mages will max out at 31st level (7875000 exp). So if you want to reach the maximum level as a wizard you’ll need to dual class at level 9 Assassin (110000 exp). Of course, reaching the cap (8000000 exp) is unlikely unless you’re soloing or going through the game a second time. So if you want higher Assassin/Thief skills you can dual class later. It's entirely a matter of what your personal preference is. Do you see your character as a thief who can cast spells or a mage who can backstab?

i hit the cap pretty easily with my sorcerer. i probably wouldn't have had enough experience points left in the game to go up again anyways, but i hit it.

But neither is there mucho difference between Assassin 9 and 10...
Well, I'll see that when in play..
As per your question, I think that it'll change through the game due to the way dual classes work and the leveling up:
First he will be Assassin only...
Then Mage only, before reaching his former Assassin level...
Then he will become a spellcasting Assassin for a time - say till Mage 14th
And last he'll become a Mage with some assassin capabilities - mostly backstab + poison (while Improved Invisible)!
