I am playing at easy level right now. And I feel that it's too easy for my taste. Can I use an early saved game( at easy difficulty ) and change to normal level, will it work?

You can change the difficulty at any time during a game. Escape to the main menu, go to options ---> game---> difficulty, and adjust it.
