Been awhile since Ive played. How would this party work?

Do you want strategies, equipment suggestions or something else?

How would it work as far as a balanced party goes. Would I encounter any extreme difficulties with just those characters? Should I have more healing? should I take on another thief other than what Imoen has?

I don't think you that you'd have any trouble, as long as you approach the encounters that you are able to handle. I think that Aerie is enough as a healer and an arcane force. Yoshimo/Imoen should be fine, though Jan is easily the best thief in the game.
I personally use Thieves mainly for combat, so Imoen's undeveloped backstab is a turn off for me in terms of her usefulness, though if you care about the roleplaying point of view, then yes, take her. The two NPCs are entirely capable of playing dual roles as arcane casters as well as front line fighters, with the right spells, so you should be able to adjust to any situation.
It may be just me, but I personally don't like the Wizard Slayer class and think that it's not as fun to play. An Assassin or a divine caster can take down a magic user with just as much ease, if not more.
Consider dual classing your Wizard Slayer to something else, like a Druid, Cleric or Thief. You can even go ahead and become a mage as well, though it doesn't make much sense.
Another character with a high natural magic resistance would be a monk, just so you know.

Your party should work well. You have arcane and divine magic, thievery and physical combat power.

I think he's rolling an Undead Hunter, Cren. Either way, I agree.
You should be able to handle most battles in the game well enough(albeit with a ton of preparation). Just don't let your tank get stunned or let any other form of CC happen to him/her as Immy and Aerie both have the health levels of a piece of paper and thus they will die quite fast.
If you want true balance, try rolling an evil Thief or thief hybrid. If you can make it through Irenicus' dungeon(hard, takes forever with bad thac0, but doable), pick up Viconia as the Cleric, Edwin as the Mage, and Korgan as the Tank. There you've got the traditional D&D F,C,M,T setup.
