I did the game without the enhanced edition, but I couldn't gamble with anyone in chapter two because I hadn't faced many novice gamblers. So I went back to chapter one (restarted) and gambled against: Heren, Miko, Odo, Gambler.

But now with the enhanced edition whenever I mention gambling to them they just say something about demon dice and say they promised the reverend they would be good. I haven't tried Odo yet, but Miko and Heren say that.

Can anyone say what I have to do to complete the whole gambling quest track?

You will have to talk to Zoltan and only when he mentions Haren, Odo and Mikul then you can play dice poker with them.

You also don't have to play dice in Chapter 1. I played for the first time against the elf in the prison cell in Chapter 2.
