Can you still dodge if you have a shield, or is it just one or the other?

Basically it's possible, that DV is higher than PA, but usually not. Since it will only use the higher value. Try my mod, which gives a slight boost to dodge so you can do offensive fighter who relays on DV and high AT. ;)

Though, you can only dodge some special attacks, like ogre's Sweeping Attack even if you are wielding a shield. And if you are not wielding shield, then you also have to dodge ranged attacks.

Parry only works against the opponent you are fighting..

Does Dodge work with opponents you aren't fighting? (..i.e. is it useful against multiple attackers?)

Does it work with a crossbow?

Here's some comparison between dodge and parry.

Dodge
+ Ranged attacks can be dodged
+ Weapon Modifier does not affect on dodge
+ May focus fully on weapon AT
+ Some attacks may ONLY be dodged
+ Can be used with ranged weapons

Parry
+ Only ½ effective encumbrance penalty
+ Weapon skill increases Parry
+ Another parry if shield
+ Bonus versus ranged if shield
