Simple. Just run back across the bridge; Polyphemus will not follow. When he heads back towards his cave, follow and loose off a couple of arrows. He will then chase you across the bridge, and then turn around and go back.
Just keep doing this until he's dead. Takes a little while with arrows (can be done with magic also), but it works.
I know, it's an AI exploit, but whatever works..
