BG1 -> ToB Questions

Hi everyone,
Yesterday I started a run through all of Baldur's Gate saga with a Elf Fighter/Thief multiclass. However, and thinking about my party going forward, I'm starting to have some doubts:
1. I never truly played a Thief, but I like the idea of hiding in shadows and explore / disable traps / pick lockets / etc. myself and not really on an NPC, especially since there's a lack of a true Thief in the game. Also, I really want to try UAI and wield Carsomyr!
But I was afraid of getting bored of not being able to be on the front-line, so I gave myself a Multiclass. However I'm not certain if a Fighter/Thief is a good choice for a front-line fighter.
Looking towards the future, Fighters are the most common NPCs: Minsc, Keldorn, Jaheira doubles as one, Mazzy, one very cool that joins in ToB… and I'm afraid a Fighter/Thief could be redundant.
There is a shortage on good mages. I don't know if Imoen's the best choice for the main mage, or if I should take Edwin with me as well.
Also: how good is Haer`Dalis as a backup mage? I have played a Blade before (and liked it a lot), but I would mostly buff myself and help as a second fighter.
Finally and considering ToB: Is a party consisting of a Fighter/Thief, Minsc, Jaheira, Imoen and the new NPC (won't spoil) a good one or is it lacking magic power? I've never truly played ToB so I don't know what will be expecting me.
One final thought: How viable is a F/M/T with a party of 4 or 5? I was thinking I could play one and alternate between what I needed most.
