Proving Ground Brawling for Profit SPOILERS

I'm on my first play through and having a good time. In the Proving Ground area of the Dwarf kingdom I wandered into a side door and found myself confronted with a dwarf who proposed fighting for the sport of the regular folks in a no-holds-barred contest.
I decided to fight once and was warned that the contest would be difficult. Well, it wasn't that bad, but it was fast and furious. In fact I thought it was tougher than the champion bouts that are set up by the main plot.
My SPOILER SEEKING QUESTIONs are:
(1) How many side brawls are there?
(2) Are the fights based on your current level, class or what?
(3) What are the rewards to winning?
