Hi!
I've played a long way in the game with a fighter\mage\cleric char
BUT not that got up to a point in which I can gain abilities
I DON'T GET TO CHOOSE ALACRITY and the +1 6,7,8 level spells.
any Idea why? is it suppose to be that way?

It's an oversight in the vanilla game.
Get the Gibberlings 3 Tweak Pack, and install the Triple-class HLA tweak. You may not be able to choose Alacrity though, I've never taken a Triple-class to a high enough point to find out, but the extra spell slots should be available.

G3: BG2 Tweak Pack Overview It was cunningly hidden under "Tweaks and Fixes".

It's worth getting the Fixpack too (also under Tweaks and Fixes) if you don't have it. According to the readme F/M/Cs and F/M/Ts in the vanilla game don't get Mage HLAs, hence your problem.
Also, use the Readme when you're installing it, and the multiple concurrent romances tweak causes problems sometimes (and won't work in a lot of ToB) so it's better to skip that one.

might be me remembering wrong. but i believe. with the 3 combo multiclass you actually due to experience cap, only will have lvl 8 wizard spells avaible. if that is the case. it makes sence you cant get the lvl 10 (9) spell

Yes, the vanilla TOB XP cap is 8,000,000 so you'll need an XP cap editor/remover to actually get 9th level spells in a triple class character.
