What is the highest score I need? I'm thinking about Find Traps/Open Locks specifically. I want to dual Imoen, but I want her to be the most effective Thief before doing so.

Unless you are intending to use Shadowkeeper when you transfer to BG2 to restore her to her correct stats, 80 in should be enough if you stock up on potions that enhance her skills. Don't waste potions of perception and power though, the Master Thievery ones don't enhance trap detection/removal remember.
