Can somebody explain me how the Thac0 of the different classes improves in ToB ? I know this in SoA and I'm interested if it is the same. Thanx.

At lv21:
Fighters get 0 TACH0 (not sure for monk)
priests get 6, thieves get 10, and mages get 14. No classes but kensai, archers improve TACH0 beyond lv21.

It follows the same progression and PnP AD&D 2nd Edition:
Fighter/Ranger/Paladin/Barbarian
THAC0 improves 1 per level
Thief/Bard
THAC0 improves 1 per 2 levels
Priest/Monk
THAC0 improves 2 per 3 levels
Mage/Sorcerer
THAC0 improves 1 per 3 levels
In BG2 they cap the THAC0 at some point, I don't recall where though.
In PnP if you get your fighter to level 31 his THAC0 before any other bonuses is -10, but this doesn't happen in BG2.
I hope this helps.

This means that a single class fighter and a multi class fighter/something have the same THAC0 after they both have got to level 21 (around 6MXP). Am I right ?

Yes, the THAC0 of the best class in a multi-class character is used.

Sarevok and Korgan seem to get thac0 bonuses all the way to L40 this is scary

Certain kits get level based bonuses aside from the ones intrinsic to their class:
Archers gain bonuses for missiles.
Swashbucklers and Kensai get bonuses for melee.
That might have something to do with it.
Korgan is a Berserker, I dunno if he keeps getting bonuses or not, but I suspect he doesn't.

Not the Korgan I've played. Of course, his actual THAC0 will be lower than 0 thanks to high strenght, good weapons and items with a bonus to THAC0.

Proficiency slots also increase THAC0. Remember, Sarevok has an 18/00 STR and Grand Mastery in 2H-Swords. So if you give him the Psion's Blade +5, he's going to get
an additional +11 to hit (+3 STR, +3 WP, +5 sword). Then, if you give him the Gauntlets of Extraordinary Specialisation, a girdle of giant strength, or any other magic item which increases THAC0, he's going to get
more bonuses. Same for Korgan and any of the other fighters (Keldorn, Minsc et al).

You're absolutely right; I forgot to mention that. Actually, a lot of people argue than there is no point in being more than specialized in any weapon. I can't understand this point of view considering the THAC0 bonus of having Mastery in a weapon.

Vegeta brings up a good point, i have often wondered about this myself. I usually end up saying each letter - Tee aich ay see oh. Which takes a long time. I think I like "taco" better.
Another word I wonder about is Vampiric - is it Vamp-EYE-rick or vamp-EEE-rick? I started just swallowing that syllable and just saying vamp-rick

But the 'O' is actually a zero, not?
To hit armor class zero is the long version of it.

Me too. Must be because Dutch doesn't have a "th"-sound.
