i was thinking about soloing the game with a fighter/mage/thief.
now question is, if i use the xp-cap remover will i be able to get full levels in fighter, mage and thief proffession?
ie lvl17 mage, 18 fighter and so on?

You'll probably need to apply some sort of rules pack so that your triple-class can cast the level 9 spells. I think
TeamBG has one.

the soa only xp cap remover fixes teh "wrap around" effect you get at high levels, but you will lose 9th level spells....
the safe xp cap remover for tob allows 40 level on EACH catagory, thus allowing for really godly chars.

The game designers assume that you'll play with the experience cap, which means a triple-class mage never casts the 9th level spells. To get the 9th level spells, you have to alter how the game handles triple-classes, via the 2DA files.
