as all the european versions have the same patch, but for different languages, r all the language packets included in the game (except the multimedia i guess) ?
if this is the case, how can i switch to another?

There are language flags in the baldur.ini file but I don't know what would happen upon changing them.
The flags are:
[Local]
Language=German
Language25=English
The combination above is taken from the english version bought in Germany and installed on a german version of windows.

probably the language25 entry is game language, but thats not all, i believe its just for multiplayer to know (as the system language and ZIP etc is there as well).
in addition there is a language.txt which contains (lots of) keywords including all items and as what they r printed, but if i remove this file they still r there as usual. and besides, there seem to b 2 large (about 10 meg each) files that contain all the dialogues.
could someone post an english language.txt so i could try if it renames the items? i guess such a hybrid version looks funny but at least i would know if it works...
as this is a german version bought in germany and on a german OS,
where do u buy english versions in germany, lord? i never manage to get any.

I'm usually looking for english versions in the following shops:
http://store.europe.yahoo.com/dschungel/index.html
http://www.gameworld.de/cart3.htm
http://www.pcfun.de/
English versions are usually easier to find when the game is new, especially if there is no localized version available. Older games are often only distributed in the best selling version, usually in the loclized one.
