I was wondering... If I need to uninstall BG2:SoA for some reason and still wants to have my characters. Do I just copy the save mapp...? Or should I copy something more too?

In the saves directory, you will see that each of your saved games has its on directory. Just save the particular directory you want and you can uninstall and reinstall all you want. Just remember to copy the directory back to the same place when you reinstall.

If you uninstall the game, it will leave your save games alone, so when you reinstall or install ToB, they are all still there.
