This is actually a query on behalf of my brother who has currently got my copy of BG (I am 1/4 of the way through ToB)

He has got to Nashkel, missed Minsc, killed Edwin and completed the mines and the Gnoll fortress.

On returning to Nashkel he wants to pick up Minsc, but all he can find is a dead body (wearing blue) in the place where Minsc should be waiting with Boo.

Can anyone help with what has happened and how to get the boy back?

I have no idea, i never heared of it.
Maybe he was hit by an area effect (fireball/cloadkill)

You could cluaconsole him in, but I don't know the code.
