How do I raise security?

I don't think there are enough locks and traps in the game to raise security to max.
Other than training it, is there another way to practice this skill?

Train it, use it, and buy better quality lockpicks/probes which offer a better skill level.

Maybe if you find a lock and key chest you could take advantage of it. Pick the lock then use the key to lock it and pick it again, not sure if this would work.

Can you use the Alteration spell to lock chests/doors, pick them, then lock them again? If you could do that then that would rock.
I, being a conjurer myself, have trained ALOT of combat skills from summoning a pet and then fighting it with either my weapon, destruction spells, or through summoning a dagger and kiklling him fast.

Can't relock using keys or unlock spells. But I can't say whether you'll find lock spells. My guess is that you won't--because it's too easy to abuse it to learn security.

Easy and CHEAP way to raise security. Your buddies in the Seyda Neen tax office are happy to help
In the room with Ergallus and the guard there's an evidence chest. Picking the lock will get the guard on you with a pay or jail message. The cost of this particular bounty? Five coins. Best part is, after you pay, the chest automatically relocks. So, you can pick it again and again... all for five coins a pop.

Yea, the only problem is that it's a level 50 lock on the chest if I remember right. Plus you only gain skill if you successfully pick the lock. Not many new thieves can pick a level 50 lock
There's also a level 10 lock in there though next to the other guy, but I opened it and I swear it stayed unlocked.

Starting value of 35 in security and a journeyman's lockpick is enough for me to open the lock one try in three. At 9/100ths of a point raise per success, that's only about 33 tries to raise a point. Or only about 165 gold to train from 35 to 36, less then half the cost of conventional training at that level. Of course, you have to factor in the cost of the lockpick, but once you gain a few skill levels you can use the apprentice pick and those costs drop accordingly.
Yep, the other chest does not relock. Worse luck, if you pick it, check your bounty. I picked it and safely took the coins out of it once, I thought. Turned out no one said anything, but they did notice and I got a bounty of 40 put on me. Since I was carrying about 5000 in stolen goods it hurt when I got caught by the guards.
Which reminds me, it seems very difficult to successfully steal from the evidence chest even if you get it open unnoticed. With a sneak skill of eighty (stand behind someone alone indoors, a few feet back. Weight down the ctrl key to sneak, go read a book for a few hours, come back to an astronomical sneak skill) I couldn't pull it off.
