1. with a monk, do the dexerity and wisdom a.c. bonuses stack? (ie. is it more beneficial to have high scores in these areas or am i just wasting points?)

2. with a cleric, are the spell levels and bonuses determined soley by wisdom? my understanding is that charisma only affects the number of time a cleric can turn undead a given day and the "strength" of this "turn" is determined by level. Am i right or wrong?

Dextarity and Wisdom do indeed stack for a Monk

Spell levels are determined by your Cleric level, all wisdom does is allow you some extra bonus spells per level; your right about turning undead.
