Start again? I think I could of done better

I have a few questions, relating to 'enriching' the game.
I'm now in the underdark. Somehow I get the feeling that I won't be back to Atthikilia (spelling) for a long time. By the time I finish the Underdark, and get back to the capital, how far into the game would you say I am? I finished most of the quests (Umar, Windspear etc) but I'm yet to do the Druid's grove and obtain a stronghold.
I'm kinda thinking I should have done these before heading to spellhold.
A richer game if I bail out and start again or do I not have a problem?
Plus, my lead character is a paladin and I'm kind of bored with that.
Plus, I only scored two out of there parts to the flail of ages - too late to get the third.
Cripes, I haven't even downlaoded the romance patches.
So, I'm thinking I might start again, play a more interesting lead character (I should be taking advantage of these new kits that we had no access to in BG).
Which leads me to another question - I might go for a female Kensai/Sorcerer multi class.
Is this possible? I read that Kensai cannot cast spells.
Final question - can multi class characters obtain both strongholds that relate to each of their classes, only one or none at all?
