I don't think there's any such thing as a "perfect game". What matters is whether you're happy with your characters and you're having fun.
I've played BG2 several times. I tended to do some of the same quests early on. After finishing those, my party was strong enough to take on just about any of the other quests, so the order in which I did them didn't make much difference. Keep in mind that the game adds more traps and monsters if your party is high in level.
Here is a suggested itinerary to start the game:
Irenicus's Dungeon (meet Imoen, Minsc, Jaheira, Yoshimo)
The Circus Quest (meet Aerie)
Go to the Copper Coronet in the Slums District to start Chapter Two (meet Anomen, Korgan, Nalia)
Free the gladiators
Go to the Graveyard District and plunder the smaller tombs (run away if you encounter monsters you can't beat)
Talk to Wellyn if you're in the Graveyard at night
Check every grave and embark on an easy quest that takes you to the Bridge District
Solve the Bridge District murders
Return to the Slums District, find the secret entrance to the Sewers, and kill the rest of the slavers
Spend some gold on the items Bernard has for sale, or visit the Adventurer's Mart
Talk to Nalia and accept her quest (Fighter/Monk/Barbarian Stronghold)
By the time you do all of that, you should have a fair amount of gold and some pretty decent equipment. If you want even more, you could rob the town blind and find a fence. The next major quest you should undertake depends on which NPCs you want to recruit and which character class you happen to be playing if you're interested in one of the strongholds:
The Unseeing Eye (Keldorn/Cleric Stronghold)
Renal Bloodscalp and Maevar's Guild (Edwin/Thief Stronghold)
The play in the basement of the Five Flagons Inn, Raelis Shai, Mekrath, and the Astral Prison (Haer'Dalis/Bard Stronghold)
Delon and Umar Hills (Valygar, Mazzy/Ranger Stronghold)
Trademeet and the Druid Grove (Cernd/Druid Stronghold)
Lord Jierden and Windspear Hills (Paladin-related quests)
The Planar Sphere (Mage Stronghold)
Jan and Viconia can be found in the Government District.
You can do all of those quests in Chapter Two, or you can save some of them for Chapter Six, which is what I usually do. If I want Imoen in my party, it doesn't seem right to do all of the quests without her, so I wait until I've rescued her before I do most of them.
There are also a few minor adventures scattered about: liches who don't like to be disturbed, other parties of adventurers (for example, there's one at the Den of the Seven Vales), Kangaxx, the Temple quests (Sir Sarles, the Morninglord's Ring), the Order of the Radiant Heart, the catacombs beneath the Graveyard District (which are related to a couple of NPC quests), NPC quests (Jan's ex-girlfriend, Viconia's rescue, Jaheira and the Harpers, Edwin's Nether Scroll, Korgan and the Book of Kaza, Anomen's trial, Keldorn's wife, Nalia and the Roenalls, etc.), the Stronghold quests, random encounters with Cowled Wizard Enforcers, heckling the Town Crier (talk to him every three days), the romances (Aerie, Jaheira, Viconia, or Anomen), etc. There's also a fiendish master plot that involves Slave Lords, Rune gangs, Skin Dancers, illithids, clones, and lots of other strange things you'll never be able to make any sense of.
And finally, of course, you have to choose sides in the guild war to gain passage to Spellhold. Personally, I think it's preferable to side with Bodhi, but don't let Mazzy or Keldorn see you join her if you want either of them in your party. After boarding the ship for Spellhold, the game will become a lot more linear, as Fable explained (although you still have some choice over the path you take--don't hesitate to explore every area). Just follow the cues the game gives you, and you'll do fine. Eventually, you will return to Athkatla (in Chapter Six), and you'll be able to do any of the quests you didn't do in Chapter Two.
You should tailor your own itinerary to suit your own preferences, your own individual playing style, and your own skills as a player. If you can be more specific about your party composition, your goals, and exactly what you're having problems with, I can make more specific recommendations.
