all quests?

is there actually a way to do all the quests?
i just started this game, well im on chapter 2 and on my way to save Nalia's keep or whatever....
but anyways has anyone done all the quests that the game gives? each time i run into someone, i get another quest, and i really wanna do them all, but there is so many, and some say to hurry and stuff......... just wondering

Dont worry about "hurry"and so on. I waited with Nalia's keep for two months game time or so and it was still there. I don't know of any quest where speed really matters.
I haven't done all of the quests because I always get bored at a certain point in chapter 2 and 3 and I want to move on with the story. But as far as I know you can't do all the quests; it depends on what choices you make whether you get some quests or not.
I think you have to play through the game at least twice to do all the quests

At least once with each class, and for one of them will three alignments.

The only time sensitive quests (as in do them now or die) are later in the game. You'll notice them when you get there.
Ther are some semi time sensitive quests: those are quests NPCs in your party want to do. if you postpone theose long enough the NPC will leave (depending on the NPC and the Quest).

However, I've noticed with some quests that spring up, if you tell the NPC that urges you to get them done that you'll have to get to that later, they don't get frustrated if you let it slide. Still, as you say, there are some quests that need to get done RIGHT AWAY in order to succeed at them, especially with any strongholds your character owns, or real 'EMERGENCY' quests.
Overall, don't overcommit yourself, or you'll find yourself in more trouble than you'd wish. Hope this helps.

Sorry, you can do most quests but not all. Sometimes you have to choose between the good path and the evil path for doing a quest. You can side with the Shadow Thieves or Bodhi but not both. You can save the druid grove or destroy it. You can help the guy in Windspear or screw him. Normally you can only get one or two strongholds (if you play a dualed or multiclass fighter/theif or fighter/mage - never tried this with a fighter/druid or fighter/cleric though). But other than those restrictions you can do all the NPC sidequests. Best way is to go with a party of only 5 permanent people. Then pick up the strays just long enough to do their quests and then drop them. To expedite things you should pick up Anomen and Jan right away and then drop them (unless they're permanent party members). This gets their quest clocks running. Then you can pick them up later on and they'll be ready to do their side quests. Once those are done you can move on to another NPC like Edwin, Cernd, Mazzy or Korgy. Jaheira is the only one you need to be careful with as she will only tolerate being kicked out of your party once (though I may have had some success in removing her by petrifying her with a Cursed Scroll of Petrification and then restoring her later on). Also Korgy will charge you 500 gold if you kick him out and then try to bring him in again.

Actually it's a bug that you can get both the fighter and the mage strongholds, you are meant to only have one.

This is true, but I was able to play that bug with the thieves stronghold and fighters stronghold as well. Now I wonder if it wouldn't work with other fighter combos like the cleric or druid.

I think it's a bug with all fighter combos, Nalia doesn't check if you already have a stronghold when she asks you to take over the castle.

I usually spend my first day out of Jon's house getting all the quests. The only party member I always keep is Jaheira. By the time night falls, I have visited every area in the city & gotten all the quests, but barely done anything.
By this time Jaheira is usually recovering from a little sickness she has gotten, so we take a nap & head out on the road towards getting my stronghold.
You can do all quests with the exception of:
a) you only can do your classes stronghold
b) some quests have a good or evil path (not both) - like Chapt. 3
c) many NPC quests require the NPC in your party
You can get around a) with the multi-stronghold patch. You can do all of c) by just picking up & dropping NPC's as needed. Unfortunately there is no way around b), you'll have to play 2 games.
Personally though, I wouldn't recommend doing ALL the quests in the same game. It makes the game more varied if you only do some quests each time. Being forgetful beings, it is refreshing to do a quest you haven't challenged in a month or two. I don't mean the simple quests, like the teddy bear or the bridge murders, but the major quests like any of the outdoor areas.
One way I pick which quests NOT to do is by what I am playing. For example: as a Palidin it is bad enough that I need to work with theives to get Imoen back, but I am certainly not going to get involved with their internal guild problem. I also won't do a B&E on the harper headquarters. Also as a LG Palidin, I would not allow certain NPC's in my party. The next game, I may play a theif. In this case, I have no problem with the aforementioned quests, but do I really care about another religion in the temple district?
By playing the role of my character, it makes the game more enjoyable, and gives the game a lot more replay-ability. If you play it enough time with enough different characters, you will eventually do all of the quests.
I hope this answers your question in more detail & also gives you some food for thought.

I decided to junk Jaheira straight away, and for some reason nobody's offering me the Trademeet quest. Pity I find her so annoying.

Go to the city gates district and talk to the folks on the street. One of them should be a messenger from Trademeet that will give you the map location for Trademeet. Now just travel there and accept the two quests (animal attacks and djinni merchants).
