Souls don't directly effect the type of enchantment you can put on an item. They are more like a charge.....some creatures have a higher value you can use to enchant items. The only limit on what effects you can enchant a weopn or iten with is that it has to be an effect from a spell that you already know...so if you wanted to enchant a sword with Soultrap, you'd have to first have purchased the spell Soultrap.
you can summon a creature and trap it's soul the same as any monster you find anywhere, but I am not sure where you could get something to summon a golden saint though.
As far as suggestions, I have an enchanted belt that lets me open locks 100, but I never use it but maybe once of twice so far. I also enchanted a shirt with invisibility. It helps with stealing things from under people noses. I'm more prone to enchanting weapons myself. They can cost a lot, and so far, the lock opeing item hasn't been worth what it cost me.

You can find scrolls with the "summon golden saint" spell. Someone in Tel Mora sells it too.

A sorcerer in Tel Branora sells the spell. Sometimes mage guild enchanters sell the scroll (their stores are a bit randomized).
