Interesting question.

In my opinion the main character gets far too powerful too quickly in Morrowind and no battles causes problems anymore. I started to find this quite boring so I'd also like to know how to up the difficulty level.

The only way I know of is to click on "options" in the startup menu and adjust the slider on the difficulty bar all the way to the right. That being max difficulty. But still with a high level character(mine is 71) the only halfway challenging fights are against mutliple enemies in Tribunal and Bloodmoon.

About difficulty,
do you start at 0 difficulty or do you lower it when you're still very low level?

Ooooops, I made a mistake. You access the "options" menu by hitting the "esc" key while in the game. :p

To answer your question Stilgar I started out at zero and never went below that but raised the difficulty as I got stronger.

I did the following (found it on this site somewhere):

General Recommendation:

Begin with the difficulty slider at level 0.
At level 5, increase the slider to 10.
At level 10, increase it to 20.
At level 15, increase it to 30.
At level 20, increase it to 40.
At level 25, increase it to 50.
At level 30, increase it to 60.
At level 35, increase it to 70.
At level 40, increase it to 80.
At level 45, increase it to 90.
At level 50, increase it to 100.
