I have a `summon fiend` spell and a `simulcran` spell. Should I get Aerie to learn them or just use them the once? Her spell book only goes up to level 7 and these spells are level 8.
Whats the best course?

IMO, if you're going to play ToB, keep 'em for her to learn. There are devices in ToB that will raise her intelligence, and let her cast higher level spells. With mage and clerical spells going for her, she's potentially the best spellcaster in the game on your side.
