After the plot twist, I was a bit confused about the identity of Revan. Was Revan a female or male? Or does the game dynamically adjust the identity based on the gender that the player chose?

It's dynamic. That's why Revan wears a mask and full body cloak. The dialogue referring to Revan will reflect "he" or "she" depending on which your PC is.
