There's a thread in the ToB forum in which Minsc, Keldorn, Saverok and Korgan are compared. If you really need to calculate which one offers the most offensive or defensive power, go check it out.

Personally, for a power-playing class, I prefer the kensai/mage. For one, the kensai does not wear armour, so all of your abilities will be designed for hairy-chested melee fighting

dual class for a larger party, since you only need to spend xp on a single class so it will level faster...
multiclass for a smaller party, since the xp will roll in fast...
or...urm....
you could make a kensai/mage multi using shadowkeeper if you really want to try out both and have a hard time deciding...

for a warrior/mage combo, kensai is the perfect choice, mainly due to his armour restriction, which BEGS for using of the magic protections (stoneskin, protection from magical weapons, mislead, etc) and also should not put you in a tough dilemma about what to put on as your armour - just use the best robe you can afford:
spoilers:
robe of the good archmage, ac5, saves +1, magic resistance +5% - trademeet merchant
rode of vecna, ac5, magic resistance +5%, casting speed -4 - bonus merchant in adventurer's mart
robe of the apparenti, ac3 - planar sphere, mage stronghold quest.
end spoiler
another thing i would like to add from my expierience with the kensai/mage (played it only once, too powerful) is NOT to make him your only wizard spellcaster. i did this at first, and he just was a mage with lots of HP's. now, as soon as i picked up imoen, and started using the kensai/mage as frontliner, which is the way he should be used - with the buffs (tenser's transformation made him unstoppable), protections (from mirror image to absolute immunity) and dispells (remove magic, BREACH!!!), while imoen concentrated on the offencive spellcasting, he started to raelly shine, as a such a powerful combo should

Yes, Quarterstaff is a great weapon for Kensai/Mages. In addition to the Staff of Magi, there are the 3 elemental staves (which instakill elementals) and the Rod of Smiting (which instakills Golems). Not to mention the Rod of Terror, which has some interesting cheesy uses in addition to its legitimate use of disabling enemies by causing them to panic.

They have a chance of instant killing. I have hit a greater air element at least 4-5 times with Staff of Air and it didn't kill with the instant kill ability.

If you don't have Throne of Bhaal, Fighter/Mage multi is much less powerful than a dual. You get no kit, you get less hit points, you get less mage levels in the end. If you do have Throne of Bhaal all this gets put aside by the uber amounts of uber high level abilities you receive as a multi.
If you dual, you'd be pretty dumb for not taking a kit unless it's strictly for roleplaying purposes. Kensai gives minor AC and big to hit and damage bonuses, berserker gives rage for some decent bonuses and great immunities.
