It doesn't really matter all that much as all chars tend to end up the same no matter what class you pick. I would go with a class that gives the best balance in the abilities represented in the mix of primary and secondary skills as these will give you more bonus points for the related abilities. You don't want a lopsided mix where half of these primary skills are associated with just one ability (like Strength). Don't pick axe, hammer, long sword, armorer and blunt as all primary skills as they are all related to the strength ability. You don't need that many and it will be harder to level up in the other abilities. So pick a pre-made class and examine the primary/secondary skills to see what the ability mix is. If you can't find one you like you can always make an Adventurer class and choose your own primary/secondary skills. As far as signs go some give nice starting temporary bonuses while others give permanent bonuses. I tend to choose the permanent bonuses like The Mage. Temporary bonuses to abilities like Personality or Agility will not increase past the 100 points you can get in them thru level ups while a permanent bonus like 50% increase to magicka is always there (and extremely handy). Hope this helps. This is not a very well balanced game when it comes to character development since both a tiny female bosmer thief and a huge male Orc barbarian will be equally strong eventually.

Last time I played as a Reguard, I chose the Crusader class as it seemed best suited to the Reguard attributes. Also enabled me to join any guild. Didnt get far in the Thieves or Mage guilds though.

i tried as redguard once. I didnt really like it. I usually go with the generic Dark Elf. I mean, it's pretty neutral when it comes to balanced attributes.
If at first you don't succeed, reload and try again.

I dont think I would take any sign besides one that gives you more magicka. The others arent that great the farther you get into the game, most are mediocre spells. The race you pick seems to mean more than the sign. There are some great racial abilities, like berserk or the even better one that Redguards get, or the magicka bonus an altmer gets.
