off hand?

I've started playing KOTOR and I'd forgotten how much I missed RPGs. However, it's been a long time since I've played one (I think Betrayal at Krondor is my most recent and that's got to be close to 8 years ago).
Anyway, I see references to the "off-hand" in regards to two-weapon fighting. I've searched google and this forum and every sight I hit talks about it like it's obvious and doesn't give an explanation. So, someone please enlighten me. I assume that how you place the weapons effects them, but it's not clear if I'm to assume that everybody in an RPG is right handed, making the left hand the "off-hand" or what.
Speaking of hands, there's one thing that's bugging me a bit about this one. As I walk around talking to people, my avatar has always got the two vibroblades that he's equipped with out on display as he walks around. It doesn't seem to matter to anybody that my guys is brandishing a pair of swords, but it looks awfully odd.
