Normally the one you start first. But there are "multiple stronghold" patches to be downloaded, if you want to.

or you can edit a global, i think its

"palyerhasstronghold" set that to 0...

so a fighter thief can get both thief and fighter strongholds...

note...you can only get offered the fighter stronghold if you are a fighter dualed from mage, until you've advanced in level enough so the mage class becomes active again... :p

i noticed something strange in my play right now.
i play multi player main: thief/mage and a ranger dualed to a cleric companied by kelsey.
and in my game i got all the strongholds even the bard stronghold quest!
the thief and mage quest i suspected the cleric and ranger ok (him not being my main char. it is rather strange) but the bard and fighter stronghold i di'n't want them but i couldn't get out of them.

Hmm... sounds like you installed the multiple strongholds component of Weimer's Ease-of-Use mod at some point. I've played with it a couple of times, but having to manage that many strongholds at once is very time-consuming and wait-dependent, so I uninstalled that component :)
