for firts question....
Well if he says that you havent killed all monsters then you havent... have you opened all doors.. or went to other cave in same area? it is near that big rock that you removed before... (not sure what it is but i think that it is a rock) entrance to other cave is just southeast/south from there...
for second question...
every race has fofourite class exept HUMAN AND HALF ELF... let say that you have Duergar cleric that you want to dual in to monk then you will get that XP penalty... so planing dualing by races fafourite class will prevent you from getting that XP penalty. Humans and half elfs can dual in to any class without getting Xp penalty but if i remember correct when you dual 3 time you will get penalty? not sure...

Did you eradicate the slimes to the last one? Did you slay each and every fire beetle? Did you kill the hook horror matriarch and all of her minions?

As a side note, if you are afraid to fight the Duergar in their caves, you might look on to having a much harder battle in the near future.

I find it easier to attack the Duergar right out instead of doing their quest for them. They're evil anyway so the decision can be justified for any character type.
As for your multiclassing issue, make sure your characters advance in their primary class and another, or just their primary class. Otherwise, you have to keep the classes within 1 level of each other (lvl 10 fighter/9mage, 4 ranger/3thief etc). The same applies if you add a third level to a human or half elf.

With regards to the Duerger, I usually do their first cleary monsters quest as I'd do that anyway, then wait for their hammer and anvil tactic to occur after the eight chambers as a couple of Walls of Fire, Fireballs and lots of Animate Dead cannon fodder usually does the trick.
The big Iron Golem things are difficult, almost impossible, if ye haven't got any +3 weaponary. Your best bet is to walk on past them in my opinion. Though I think that if you have a powerful enough Rogue you should be able to take the stuff without setting off the Iron Golems.
