Hello!
I am just about to have this game, but I would like to ask you one question about online play. When I install the 2nd expansion: Hordes of the Underdark, will I be able to play on servers that are using Shadows of Undretide?

Do you have Shadows of the Undretide installed as well?

If you don't have SoU installed, then you can't.

If you have it installed, then it is up to the servers construction. Some servers you can, others you can't. (I don't know much about the technical NwN server stuff myself, it is just personal experience).
So I would advice you to contact the server responsible people and asking them.
