Saving levels

I am a newbie playing as a Soldier and have just reached the Vulkar Base on Taris. I am saving my levels as I have seen recommended in various guides. I am currently at Level 4. My question is this: when I get to Dantooine, at what specific point in the game do I start leveling up? I want to wait until I am a Jedi so I can get higher Jedi levels, but how do I know when is the best time to start leveling up? Is there a specific part of the game that says “You are now a Jedi, it is time to level up” or do I just wait until after I have left Dantooine to go to another planet?
Also, I have enough XP to get to 6 but I am considering just going to 5. If I go in to level up, will it take me all the way to 6 or will it do just one level at a time so that I can stop at 5?

Simple: start leveling up as soon as you become a Jedi. That's the point you'll be able to get Jedi powers, which is where all those extra levels will count.
Note: in my opinion, there's really no reason to save levels, at all. You'll be facing tons of opponents with braindead AI throughout the game, and provided you don't play blindfolded, it will be pretty difficult to lose. There's no reason to max out your character in KotoR, as a result--but by all means, do whatever you would like.

If you're going to save levels so you have more powers when you become a Jedi, you have to go to level 2 before you leave Endar Spire; it's required. After that, many people are able to go through Taris entirely just on level 2 (myself included), so while it is kind of hard, it is possible. After that, you go to Dantooine. Not until you finish your Jedi training (the cutscene, not the actual quests) will you be able to get Jedi powers, so you can start leveling up then.
It does it one level at a time.

Thanks for all of the tips and advice. It's really been helpful. So far this has been a great game. I look forward to more interaction with ya'll as I progress through the game.

how does one save levels?
after you gain level two on the endar spire, do you not push the a button to allocate your newly gained feats and skills?
i'm just a little confused about the whole process, i suppose i still am a noob at the game.

Well, as you surely know you become a Jedi at a point later in the game. Since the level cap is 20, and the experience jumps between levels gets bigger and bigger, some people like to "save levels" when they are not Jedi early in the game.
All it involves is not clicking the button to level up, like you say. Once you get to Dantooine, at some point you choose a Jedi class, and from that point onwards you level up in that class alone. At which point you use all the level-ups you've earned, so you are instantly a level 3+ Jedi, instead of just one. Of course it depends how many levels you save. You will be level 9 total once you select which Jedi class (should be anyway!). So if you didn't save levels you'll be 8 normal/1 Jedi, if you saved 4 levels you'll be 4 normal/5 Jedi, and if you stopped at 2, you'll already be a level 7 Jedi. Just gives you a head-start on the Jedi powers, which are by far the best ones in the game. With the bonus feats, ability to use a light-saber (which you should be using!), along with things associated with that - blaster bolt deflection, fully upgradable, by far the most powerful weapon in the game, and of course force powers. By saving levels you naturally end up with more "force-points", which is what you use up by using your powers, because you only start gaining them once you become a Jedi.
