Disappearing quests

Right at the beginning of the game (not sure when - I think it's just after you graduate) there's a quest to kill some snow troll or something. It's greyed out because you don't have enough experience.
So I went and did another quest, and when I returned, the snow troll quest card was gone.
What gives?
