Use +3 or better ranged weapons (crimsom dart, firetooth) and try to lure them to a blockade (a door for example).

Magic isn't very effective with them due to their very high magic resistance (actually magic/elemental resistance is around 100%), so you have to rely on physical dmg: use choke points to your advantage and hit them with +3 ranged weapon: sling of Everard, Thasheron/Gesen bow, Azuredge/Riftome axe, Fire tooth dagger, Dwarven thrower (dwarf only).

To use magic on them, you first have to use Lower Resistance spells or the like. But you can of course use spells to buff up a fighter with a +3 weapon, and do it that way.

For some different strategies, you can check here

Hasted Fighters with strength potions, some sort of protection against blunt damage (and poison if you can find it), and the biggest weapons you've got are probably the most efficient way to take them down without using cheese. If you're in Suldanessellar, the ranged attack cheese strategy won't work unless you can create a choke point with invisible characters or something like that.

Have you tried using the Priest spell Harm? I can't remember if that works against golems. You might have to lower their magic resistance first.

I think I once captured a couple of adamantite golems in Suldanessellar with illithid control circlets (from the Underdark) and let them do a lot of the work. (Either that, or I had used Ctrl-Q to capture them.) :) I can't remember if I was able to heal them; their magic resistance might have interfered with healing spells.

SPOILER

Also, in Suldanessellar, you can avoid fighting some of the monsters in the streets if you complete the main quest there quickly, but it's not the most heroic way to solve the problem.

The choking point strategy works great everywhere when you're not in Suldenesselar (an even inthere you can still use it sometimes), what's also great to know is that golem's fists do not reach as far as 2 handed weapons! If you can get them in a choking point you can use a quarterstaff/2 handed sword/halberd/spear to hack them down while they can't reach you  .
I also know from a friend that you can decrease a golem's magic resistance by giving him magic resistance enhancing spells: their magic resistance is verry high and when you enhance it it goes over 100, which is impossible for the game which (according to my friend) resets it to 0. I haven't tried it yet but I recall seeing it on the internet somewhere too, so it probably works.

Like others have mentioned, magic is very weak versus golems. You have to rely solely on your physical damage to defeat them. This means, hopefully, you have very capable fighters/tankers. Second to that are your items.

Weapons
FoA does exceptional well against golems. It can hit all golems, which not all weapons can do. Its damage is nearly impossible to prevent completely. The slow-effect counters the effect of self-hasting golems. Always keep in mind, that when an enemy is slowed, it has less opportunity to land hits, and therefore, in a sense, the slow-effect can also be considered a method of damage prevention.

Crom Faeyr is also very good. More damaging than the FoA and it gives a huge Thac0 bonus, but without the slow-effect. The one-hit-KO versus stone and other lesser golems is very nice, but by that time, they usually dont pose much of a threat for it to be useful. Still, it's a bonus.

All the +4 weapons do fairly well vs golems, but in most cases, blunt weapons really have the advantage.

Potions
Regeneration potions are pretty good vs tough opponents. They give lots of life per round when you stack multiples of them. I dont remember whether boots of haste doubles the regeneration, but certainly it's worth a try. I used a lot of these when i solo'ed with my fighter/cleric. In 1 on 1 fights (hard bosses), these can really tip the scale in your favor.

I also forgot that those in Suldanessellar you can easily be defeated by using a stoneskinned mage, there's no way they can land 10 hits on them before you fighters made pulp out of them ;) .

If you have a thief or a stalker, stealth is a good option.

Oh and in addition to what Miser said what I was about to say a good alternative to above is simply take a hasted guy and make him lure the golem into going in circles while your other guys shot him down, hey its worked for me.
